Why Geeky Wellness?

I have been thinking about changing to Geeky Wellness for a while. When I started Geeks Who Lift, it was supposed to be a partnership with my husband. We both were working out and he is a runner.

But it became clear, that he is not a writer. It falls on me since I am more concerned with all-around wellness and not just into working out, so I am changing it to Geeky Wellness.

What can you expect?

I will write about wellness in general. Things I find useful in my everyday life, recipes that are family favorites, workouts, and many more things.

As a start, there will be one recipe and one blog post a week. To keep it manageable for me.

Best Dairy-Free Waffles Ever!

Healthier, dairy-free waffles are made with almond milk and applesauce.

In November of 2015, I worked with a trainer and he recommended that we go dairy-free. Sow I did and let me tell you for this Swiss Gal it was no easy feat. I still miss me some gruyere, but I am feeling much better these days.

Sunday mornings are a big thing for us, as it is mostly the only day of the week, our whole family gets to eat breakfast together. Now that the kids are Teenagers and one of them eighteen and going to Community College and having a job. Family meals have become less frequent. Therefore I treasure our Family Breakfast and waffles is one of our favorites.

That is the reason I revamped this recipe to make dairy free and low fat, but still as tasty as possible.

Best Dairy Free Waffles Ever!

This is one of our favorite breakfasts in on a Sunday Morning.

You can eat them with butter and syrup. In our family, it's agave syrup, peanut butter, dairy free yogurt, and Cherries. (not all together)

Ingredients

  • 1 3/4 cups All Purpose Flower can be a cup for cup gluten free
  • 3 Eggwhites
  • 1 3/4 Cups Unsweetened Vanilla Almond Milk
  • 2 tsp Baking Powder
  • 1/2 tsp Salt
  • 1/2 cup Unsweetened Apple Sauce
  • 1 tbsp Coconut Sugar You can use regular table sugar

Instructions

  1. Beat the egg whites until stiff and fluffy. In a big bowl, mix dry ingredients. Then add the milk and applesauce and mix well. 
    Slowly fold the egg whites in and then bake on preheated Waffle Iron. Since there is no fat in the dough, you need to spray your waffle iron with cooking spray, so the waffles won't stick to it. 


 

update…

So it has been 2 months since had my surgery.  I had ups and downs, I have been trying to workout for a while now, but to no avail.  I also had quite a bit of stuff happening in my life. I opened a store with my business partner and we make custom apparel and stay tuned there will be some fitness gear with it as well.

I am excited to design some workout tanks for Geeks. 😀

School is also out now, which means I can now get my schedule back on track. As of today, my husband and I did some meal prep. I made a breakfast casserole and I am making overnight apple cinnamon oatmeal and I will post the recipe for both of them later here on this blog.

As of tomorrow I am back at the gym and I have got get going again on this, as I really wanna loose the rest of this weight and put this surgery behind me.

Preparing for an injury related break…

So I found out last week that on March 24th I am going to have a bone spur in my foot removed that has broken off and is just floating. I used to get Cortisone injections, but my Orthopedic Surgeon decided it would be better to take it out.

The surgery is out patient, but they will put me under. So my hubby is taking me and driving me home after. I was told that I will be in a Boot for 4 weeks after.
4 WEEKS!!! YIKES!!!

So I need to prepare myself better mentally for this then with my last two surgeries. I had a deviated septum fixed in 2008 and I started to lack going to the gym and I gained 15lb. after that surgery. After my gall bladder surgery in 2011 I pretty much just gave up.

So this time around, I will not let this put me in the corner. I will make sure my food will be as clean as it gets. Cause that will be the most important part. But I also know there is a hand bike at the gym. So I can do some Cardio and my trainer said we can train the upper body. I just don’t want to give up and loose the momentum I have build these past 4 months.

I know I also have amazing support from my family this time, as I am very blessed that we all eat clean, dairy and gluten free. So there won’t be junk in the house, as I am going to grocery shopping before the surgery. Make sure there are good snacks in the house.

I am looking forward to this new adventure.

I got food poisoning and was not in shape to cook or eat healhty. So I promise this weekend there will be new recipes.
I am trying tonight eggplant fitters, gluten free and then tomorrow it’s fajitas not gluten free but healthy and yummy and Sunday there will be some amazing asparagus recipe.
